Plainfield Mayor Is Deciding Vote on Liquor License for New Restaurant

Sovereign set to open soon on Lockport Street.

With two trustees voting no and one abstaining, a zoning amendment to grant liquor licenses to a new downtown Plainfield business barely passed Monday.

With no discussion from the board on the issue, trustees Margie Bonuchi and Dan Rippy voted against allowing class F and class K licenses to Sovereign, a gastropub set to open soon in the former Bin 48 location at 24205 W. Lockport St. Meanwhile, trustee Garrett Peck abstained from voting.

That left three "yes" votes from trustees Paul Fay, Bill Lamb and Jim Racich. 

Ultimately, Mayor Michael Collins has the deciding vote, saying yes to the requests.

Owner Rafael Gomez in May told Patch the restaurant will specialize in fresh, farm-to-table food and craft beers.

A class F license allows the retail sale of alcohol for consumption on the premises for businesses where at least 75 percent of the retail floor area is devoted to sit-down meals and not more than 25 percent is devoted to lounge, bar or banquet purposes. A class K license allows the sale of alcohol in an outdoor beer garden. 

Sovereign's home was previously the location of Bin 48, which closed in March. Before that, it was known as O'Sullivan's Irish Pub.
